Ingredients:
- Tuna loin (1 pound)
- Sesame seed oil (4 teaspoons)
- Sesame seeds, white roasted (1 tablespoon)
- Sesame seeds, black (1 tablespoon)
- Black pepper (1 teaspoon)
- Kosher salt (1 teaspoon)
Additional ingredients:
- Mango, peeled and diced ¼ inch (1 cup)
- Capers, whole (2 tablespoons)
- Red radish, diced ¼ inch (2 table spoons)
- Lime juice (1 tablespoon)
- Cilantro, chopped (2 teaspoons)
- Kosher salt (1 teaspoon)
Preparations:
In a small bowl combine the mango, capers, radish, lime juice, cilantro and kosher salt, mix well. Cover with plastic and keep in refrigerator. Put the tuna on a plate. In a small bowl mix the white and black sesame seeds and then rub the tuna, all sides, with 2 teaspoons of sesame seed oil, then with sesame seeds, all sides. Preheat the skillet to medium high heat, add 2 teaspoons of sesame seed oil to the skillet, add the tuna loin and sear on all sides. Sear for 4 minutes then remove tuna to a cutting board, slice it thin, place it on a plate, add on the relish and enjoy.
