Ingredients:
- Salmon steak, skin on, bone in (8 ounces)
- Extra virgin olive oil (2 teaspoons)
- Black pepper (½ teaspoon)
- Kosher salt (1 teaspoon)
Additional ingredients:
- Roma tomato, diced ¼ inch (½ cup)
- Red onions, diced ¼ inch (¼ cup)
- Yellow onions, diced ¼ (¼ cup)
- Lime juice, fresh (1 tablespoon)
- Cilantro, chopped (1 tablespoon)
- Serrano chili, chopped (1 1/2 teaspoons)
- Black pepper (½ teaspoon)
- Kosher salt (½ teaspoon)
Preparations:
In a small bowl combine the diced tomato, red and yellow onions, lime juice, cilantro, serrano chili, black pepper, and salt. Mix well and cover with plastic. Refrigerate promptly. Preheat the broiler to a high heat of about 500 degrees. Rub salmon steak with olive oil on both sides and add black pepper and salt. Then place on the broiler and let it obtain grill marks for 2 minutes on both sides. Then turn down the heat to a medium, heat about 375 degrees and let it cook for 8 more minutes.
Remove the salmon to a plate, topped with the salsa and enjoy.
